While this tutorial mostly focuses on using SF Symbols in SwiftUI, there is a section at the end which covers how to use SF Symbols in UIKit.
What are SF Symbols? I think Apple’s documentation explains it best:
SF Symbols provides a set of over 1,500 consistent, highly configurable symbols you can use in your app. Apple designed SF Symbols to integrate seamlessly with the San Francisco system font. SF Symbols are available in a wide range of weights and scales to help you create adaptable designs.

You can use SF Symbols in apps running in iOS 13 and later, watchOS 6 and later, and tvOS 13 and later.

In order to browse through all of the available SF Symbols, download the SF Symbols app and then launch it.

Get familiar with the app, browse through various categories, try changing the weight of font in the upper dropdown to Bold. Note how the SF Symbols update in place to reflect your pick. This is a great tool to help you decide on which symbols and which configuration you’d like to use in your app.
How to use SF Symbols in SwiftUI
Using SF Symbols in a SwiftUI app is as simple as adding an image with a name of desired symbol:
This adds the symbol into your view using default size and weight.
Change size of SF Symbol (treating it as a font):

How to use SF Symbols in UIKit
There are two ways you can use SF Symbols in a UIKit app – in Storyboard or in Swift code.
How to use SF Symbols in storyboard
Drag and drop Image View onto storyboard view. Select it and then type desired symbol’s name as the Image name under Attributes Inspector.
In order to adjust size, scale and weight of the symbol, specify Symbol Configuration under Attributes Inspector of the Image View.
How to use SF Symbols in Swift code
Just like in SwiftUI, creating a symbol in Swift requires to initialize an image with a given symbol name:
Then, use the symbol image in an UIImageView, UIButton or any other view:
Use UIImage Symbol Configuration to configure the symbol with desired text style (and other attributes):
